Knowledge Management of Kuai-Tiao-Paak-Mor in Tourism Promoting of Phanom Sarakham District, Chachoengsao Province

Abstract

This research aimed to study on 1) knowledge of Kuai-Tiao-Paak-Mor of Phanom Sarakham district, 2) tourism promoting via Kuai-Tiao-Paak-Mor of Phanom Sarakham district, and 3) creating tourism promoting strategies by Kuai-Tiao-Paak-Mor of Phanom Sarakham district, Chachoengsao Province participation. Qualitative research method was adopted and the research instrument was interview form. The key-informer were local wisdom scholars, elderly people who know the background of Kuai-Tiao-Paak-Mor, 5 Kuai-Tiao-Paak-Mor sellers from every shops in Phanom Sarakham District, the president of food entrepreneur, tourist attractions keepers in Phanom Sarakham district, local administrators, 3 government officers, president of community, Phanom Sarakham subdistrict Headman, Village Head Man, public relation staff, Deputy District Chief who take responsibility in creating Phanom Sarakham district strategies, Chief Executive of the SAO of Phanom Sarakham, Chief Executive of the Municipality of Phanom Sarakham, Deputy Chief Executive of the Municipality of Phanom Sarakham, Deputy District Chief of Phanom Sarakham, Vice Chairman of the Municipal Council of Phanom Sarakham, Municipal Clerk of Baan-Chong district, Chief Administrator of the SAO of Muang-Kao, Member of the Municipal Council of Phanom Sarakham, Mayor of Taa-Taan district, Member of the Municipal Council of Kao-Hin-Son district  and the number of key-informer was 27. The data was analyzed by summarizing and analyzing from study points interpreting.

The research result found that 1) knowledge of Kuai-Tiao-Paak-Mor of Phanom Sarakham District had 4 points, 1) observing knowledge, in Phanom Sarakham district there were varieties of local wisdom such as Kanom-Jaak, Kuai-Tiao-Paak-Mor, fruit transformer, Kaao-Tuu, Kanom-

Guichai, basketry handicraft and etc., but the researcher applied knowledge of Kuai-Tiao-Paak-Mor, which was the famous food of Phanom Sarakham district, to participate in tourism promoting. 2) Knowledge collecting, studying and collecting knowledge of Kuai-Tiao-Paak-Mor cooking from interviewing, asking, observation, documentations and other books, 3) knowledge synthesis, researcher grouping knowledge and sorted details of Kuai-Tiao-Paak-Mor from documents and acquire correct knowledge of Kuai-Tiao-Paak-Mor. Knowledge of Kuai-Tiao-Paak-Mor consist of ingredients, materials, Kuai-Tiao-Paak-Mor cooking processes and selling, and 4) keeping knowledge, Kuai-Tiao-Paak-Mor knowledge collection from people who had skills knowledge and acceptable people from community, trying and practicing until being expert and can do it, then producing journal, brochure, handbook and expanding knowledge by applying technology in use via website, CD, producing cooking program, to build income to people  to live with happiness and the economy of the community sustainable.  2) Tourism promoting via Kuai-Tiao-Paak-Mor of Phanom Sarakham district, applying culture and local wisdom to be selling points, and need cooperation and participation from many sectors, both government sectors and private sectors and also people who live in the community, and having enough budget allocation to support tourism, if getting enough support from government or intermediate sectors the community would apply budget to develop suitable points. 3) Creating tourism promoting strategies by participation of Kuai-Tiao-Paak-Mor had 2 strategies, the first strategies was promoting image of Phanom Sarakham district, Chachoengsao Province, and the second was promoting tourism of Phanom Sarakham district by participation of Kuai-Tiao-Paak-Mor.
