Development of Cereal Rice Cracker Product for Mae Maensri Community Enterprise of Hua Sam Rong Subdistrict, Tha Wung District, Lopburi Province by Participatory Action Research

Abstract
The aims of development of cereal rice cracker product for Mae Maensri community enterprise of Hua Sam Rong subdistrict, Tha Wung district, LopBuri province by participatory action research were to (1) develop the product formula and the production process of the cereal rice cracker, (2) develop the package and label of the cereal rice cracker, and (3) Satisfied survey of consumer of developed products. The key informant for developing the product formula and the production process included leader and 10 group members, and 30 panelists who were like and familiar with the product, same as developing the package and label included 10 leader and group members. The sample for exploring the satisfaction of general consumer included 200 general panelists, leader and 10 group members. Tools used for research were a questionnaire the focus group to discussion for requirements developing of food products label. The questionnaire of sensory evaluation using a 9-point hedonic scale and satisfaction surveys. Means and standard deviation of the results were reported. It was found that the developed products were accepted by consumers and received the liking scores in the range of most like, has a beautiful packaging and the format according to requirements. The satisfaction survey of group members and consumers for the developed food product was the most satisfying level.
