A comparative study of the difference of Yunnan Hot Pot in the style of Ban Rak Thai Village Mae Hong Son Province and traditional Yunnan Hot Pot, China Faculty of Humanities, Kasetsart University

Abstract

The objectives of this research is 1. to study the similarity and differences between the Yunnan hot pot of Rak Thai Village from Mae Hong Son and the traditional Yunnan hot pot from China, and 2. to study the factors that cause differences between the Yunnan hot pot of Rak Thai Village from Mae Hong Son and the traditional Yunnan hot pot from China. The study’s method is to interview Yunnan Chinese people living in Rak Thai Village in Mae Hong Son Province and compare the data with the book 《云南家常风味菜》by studying the characteristics of names, containers, primary raw materials, secondary raw materials, sauces, and cooking processes. The results found that both types of hot pot were made with the same process, but the names and sauces were different. The container, primary raw materials, and secondary raw materials were both similar and different. The factors that made the difference including residential conditions, social and cultural background, economic status, eating habits of each family, and current trends in that particular period of time.
