บทคัดย่อ
กลุ่มวิสาหกิจชุมชนเกษตรอินทรีย์วอแก้ว อำเภอห้างฉัตร จังหวัดลำปาง ผลิตและจำหน่ายข้าวกล้องงอกไรซ์เบอร์รี่ที่มีคุณภาพสูง งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนาผลิตภัณฑ์น้ำข้าวกล้องงอกไรซ์เบอร์รี่ด้วยกิจกรรมที่ชุมชนมีส่วนร่วม โดยการถ่ายทอดองค์ความรู้ทางวิชาการให้กับกลุ่มวิสาหกิจชุมชน เพื่อให้มีความรู้และทักษะการแปรรูปน้ำข้าวกล้องงอกไรซ์เบอร์รี่ที่ถูกสุขลักษณะ รสชาติอร่อย และสร้างแผนการตลาดเพื่อจำหน่ายสินค้า ด้วยการดำเนินการดังนี้ 1) ศึกษาสภาพแวดล้อมและศักยภาพของกลุ่มในการผลิตน้ำข้าวกล้องงอกไรซ์เบอร์รี่ 2) ทดลองการผลิตผลิตภัณฑ์น้ำข้าวกล้องงอกไรซ์เบอร์รี่เพื่อสุขภาพ 3) ถ่ายทอดเทคโนโลยีการแปรรูปน้ำข้าวกล้องงอกไรซ์เบอร์รี่ให้ชุมชน และ 4) วิเคราะห์แผนธุรกิจ โดยใช้แบบจำลองธุรกิจ ส่งผลให้กลุ่มวิสาหกิจชุมชนเกษตรอินทรีย์วอแก้ว ผลิตน้ำข้าวกล้องงอกไรซ์เบอร์รี่ที่มีคุณภาพสูง ซึ่งเป็นอีกทางเลือกหนึ่งของการบริโภคเครื่องดื่มเพื่อสุขภาพ และผลิตภัณฑ์นี้อยู่ระหว่างการขอรับมาตรฐานการผลิต และการขอเลข อย. เพื่อให้สามารถจำหน่ายในตลาดทั่วไปได้ และจากการคำนวณต้นทุนการผลิตพบว่า หากสามารถจำหน่ายน้ำข้าวกล้องงอกไรซ์เบอรี่ขวดแก้วในราคาขวดละ 35 บาท กลุ่มวิสาหกิจฯ จะมีกำไรขวดละ 16 บาท คิดเป็นร้อยละ 46 ซึ่งจะทำให้ชุมชนมีธุรกิจที่เพิ่มรายได้ เป็นการสร้างความเข้มแข็ง และมั่นคงให้กับชุมชนต่อไป
