บทคัดย่อ
งานวิจัยนี้มีวัตถุประสงค์เพื่อเตรียมความพร้อมเกษตรกรและผู้แปรรูปปลาสลิดบางบ่อ อำเภอบางบ่อ อำเภอบางพลี อำเภอเมือง และอำเภอบางเสาธง จังหวัดสมุทรปราการ ในการพัฒนากระบวนการผลิตปลาสลิดบางบ่อ เพื่อขับเคลื่อนการขอใช้ตราสัญลักษณ์สิ่งบ่งชี้ทางภูมิศาสตร์ไทย โดยใช้กระบวนการวิจัยเชิงปฏิบัติการแบบมีส่วนร่วมกับเกษตรกรและผู้แปรรูปปลาสลิดบางบ่อ และหน่วยงานภาครัฐ โดยมีการดำเนินการดังนี้ 1) การสร้างการรับรู้ ความรู้และความเข้าใจเกี่ยวกับสิ่งบ่งชี้ทางภูมิศาสตร์ปลาสลิดบางบ่อ 2) การพัฒนาวิธีการเลี้ยงปลาสลิดบางบ่อ 3) การพัฒนาการแปรรูปปลาสลิดบางบ่อ 4) การพัฒนาระบบควบคุมตรวจสอบคุณภาพการผลิตปลาสลิดบางบ่อ และ 5) การถ่ายทอดแผนการเตรียมความพร้อมการจัดการปลาสลิดบางบ่อสู่ชุมชน ผลการดำเนินการทำให้เกษตรกรสามารถพัฒนากระบวนการผลิตปลาสลิดบางบ่อได้ตามมาตรฐานสิ่งบ่งชี้ทางภูมิศาสตร์ร้อยละ 59.02 ผู้แปรรูปปลาสลิดบางบ่อสามารถพัฒนากระบวนการแปรรูปได้ตามมาตรฐานสิ่งบ่งชี้ทางภูมิศาสตร์ร้อยละ 12.5 และมีคู่มือการควบคุมและตรวจสอบคุณภาพการผลิตปลาสลิดบางบ่อ นอกจากนี้ยังมีระบบฐานข้อมูลสารสนเทศซึ่งประกอบด้วย ระบบฐานข้อมูลปลาสลิดบางบ่อ ระบบการตรวจสอบคุณสมบัติและการสมัครขอใช้ตราสัญลักษณ์สิ่งบ่งชี้ทางภูมิศาสตร์ปลาสลิดบางบ่อ และระบบฐานข้อมูลการมีส่วนร่วมและการเรียนรู้ผ่านโซเชียลมีเดียและเว็บไซต์ เพื่อเผยแพร่ข้อมูลปลาสลิดบางบ่อ
