บทคัดย่อ

This research aims to investigate the behavior, demands, key characteristics of the product in instant rice-based beverages that consumers desire and to analyze the factors (using factor analysis) that influence the key characteristics of rice-based beverages that consumers desire. The study involved 150 respondents who completed a questionnaire as a data collection tool.


            The study found that, based on the survey of consumer preferences for the development of rice-based beverage products, the following product development concepts can be derived. The product should be in the form of cocoa-flavored powder, with added ingredients of soy protein and malt powder. It should be packed in single-serving sachets, approximately 15-20 grams per sachet, and priced between 21-30 baht. Factor analysis of 17 key characteristics desired by consumers that can be grouped into four categories: 1) Factors related to appearance and health safety, 2) Factors related to flavor, taste, and texture, 3) Factors related to the use of alternative raw materials, and 4) Factors related to solubility properties and nutritional value. Factor 4, which encompasses solubility qualities and nutritional value, garnered a significant significance score and ranked prominently among the other variables. Food producers should utilize this information as a guideline to develop rice-based beverage products that cater to consumer preferences.
