การพัฒนาสูตรและการประเมินคุณภาพของผลิตภัณฑ์อาหารพื้นถิ่นเพื่อสุขภาพ สำหรับผู้สูงอายุ ในตำบลคลองปราบ อำเภอบ้านนาสาร จังหวัดสุราษฎร์ธานี

บทคัดย่อ

การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อ 1) ศึกษาข้อมูลอาหารพื้นถิ่นและคัดเลือกเมนูที่เหมาะสมสำหรับผู้สูงอายุ 2) พัฒนาและปรับปรุงสูตรอาหารพื้นถิ่นให้เหมาะสมกับผู้สูงอายุ 3) ประเมินความเหมาะสมและการยอมรับของสูตรอาหารที่พัฒนาขึ้น โดยใช้รูปแบบการวิจัยแบบผสมผสาน ดำเนินการในพื้นที่ตำบลคลองปราบ อำเภอบ้านนาสาร จังหวัดสุราษฎร์ธานี กลุ่มตัวอย่างประกอบด้วย ผู้รู้ด้านอาหารพื้นถิ่นในชุมชน จำนวน 30 คน เครื่องมือที่ใช้ ได้แก่ การสัมภาษณ์แบบกึ่งโครงสร้าง การประชุมกลุ่มย่อย การจัดกิจกรรมเชิงปฏิบัติการ และแบบสอบถามประเมินความเหมาะสมและการยอมรับของสูตรอาหาร วิเคราะห์ข้อมูลด้วยสถิติเชิงพรรณนา ได้แก่ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐาน และค่าร้อยละ


ผลการวิจัยพบว่า เมนูอาหารพื้นถิ่นที่ได้รับการคัดเลือกและพัฒนาเป็นสูตรมาตรฐาน ได้แก่ หลนไตปลา ข้าวยำใบไม้ และสละลอยแก้ว ซึ่งมีคุณค่าทางโภชนาการเหมาะสมสำหรับผู้สูงอายุ โดยให้พลังงานในระดับเหมาะสม มีไขมันต่ำ และมีใยอาหารที่เป็นประโยชน์ สำหรับข้อมูลทั่วไปของผู้ตอบแบบสอบถาม พบว่าส่วนใหญ่เป็นเพศหญิง (ร้อยละ 86.67) อายุระหว่าง 51–59 ปี (ร้อยละ 33.33) มีสถานภาพสมรส (ร้อยละ 79.92) การศึกษาต่ำกว่าปริญญาตรี (ร้อยละ 66.67) และประกอบอาชีพเกษตรกร (ร้อยละ 53.33)


ผลการประเมินความเหมาะสมและการยอมรับของสูตรอาหารที่พัฒนาขึ้น พบว่า ความเหมาะสมของเอกสารสูตรมาตรฐานอาหารพื้นถิ่นเพื่อสุขภาพสำหรับผู้สูงอายุ ความเหมาะสมด้านรสชาติ รสสัมผัส และกลิ่น แบบต้นตำรับ และความเหมาะสมด้านลักษณะหน้าตาอาหาร และการจัดเสิร์ฟ อยู่ในระดับมากที่สุด
